How to make Seitan
Ingredients
- 2 cups vital wheat gluten (I buy this at bulk barn)
- 2 cups of cold water (very important that it is cold!)
- 1 tsp garlic powder
- 1 tsp onion powder
- 1 tsp white pepper
- 1 tbsp sea salt
- 2 tbsp olive oil
- 1 tbsp soy sauce (I use Tamari)
- 2 tbsp tomato paste
Instructions
- Mix all the dry ingredients in a bowl
- Mix all the wet ingredients in another bowl
- Pour 80-90% of wet ingredients into the dry ingredients
- Knead into a dough with your hands or a spoon etc
- Cover with a kitchen towel and let rest for half an hour
- Knead the dough again, and form into a loaf

Add cold water into a pot (important it's cold water) and pour
what's remaining of the wet ingredients

Add 1 tbsp soy sauce, 1 tsp white pepper, 4 garlic cloves, 1 roughly
cut onion, and stir
- Put the loaf into the pot
- Add cold water until the fluids are an inch above the loaf
- Put on a cold burner, and turn burner on medium heat
- Let simmer lightly for approximately 1h 15 minutes
