How to make Seitan



  1. Mix all the dry ingredients in a bowl
  2. Mix all the wet ingredients in another bowl
  3. Pour 80-90% of wet ingredients into the dry ingredients
  4. Knead into a dough with your hands or a spoon etc
  5. Cover with a kitchen towel and let rest for half an hour
  6. Knead the dough again, and form into a loaf
  7. Add cold water into a pot (important it's cold water) and pour what's remaining of the wet ingredients
  8. Add 1 tbsp soy sauce, 1 tsp white pepper, 4 garlic cloves, 1 roughly cut onion, and stir
  9. Put the loaf into the pot
  10. Add cold water until the fluids are an inch above the loaf
  11. Put on a cold burner, and turn burner on medium heat
  12. Let simmer lightly for approximately 1h 15 minutes
